Ingredients required for raspberry friands recipe:

• 160g unsalted butter, melted and cooled

• ⅔ cup (100g) gluten-free plain flour, sifted

• 1 ⅔cup (250g) icing sugar, sifted

• 1 cup (100g) ground almonds, sifted

• 6 large egg whites

• 1 tbsp. queen natural almond extract

• 3 tbsp. queen vanilla bean paste

• 1 cup (125g) fresh or frozen raspberries

• ½ cup (60g) flaked almonds

• Cream to serve

How to prepare raspberry friands recipe:

• In the first step, preheat your oven to 180 degrees.

• Grease tray with melted butter.

• Take a bowl and whisk flour, icing sugar, and almond meal.

• Take a medium bowl and stir the eggs till starting to fluff. And mix together the egg whites into the flour mixture.

• Take a pan and melt the butter on low heat. When butter is melted properly adds Almond Extract and Vanilla Bean Paste and mix until well combined.

• Now fill the batter in cupcakes and place 3-4 raspberries. And bake it for 10-15 minutes. Or insert a toothpick to see comes out clean. Or bake till it looks golden brown.

• Let it cool for 10 minutes. Serve and enjoy.

NOTES

You can make this recipe with any berry – blueberries and raspberries. You can use frozen berries – just pop them into the batter frozen. My friands are completely keto-friendly and I make mine refined sugar-free too by using unsweetened sugar.
