Ingredients

For our meat, tomato and pistachio pasta, you’ll need:

100g shelled pistachios

50 ml olive oil

500g cherry tomatoes

Salt and pepper to taste

3 cloves of garlic

1 lemon, zested

500g spaghetti

2 teaspoons crushed red pepper

130g Grated Pecorino Romano cheese

500g pork sausages

50g basil for garnish

Preparation

1. Start by bringing a pan of salted water to a boil and place your spaghetti in

2. Roast your pistachio nuts in a small pan until fragrant

3. Heat some extra virgin olive oil in a pan, add tomatoes and season with salt and pepper and cook for 10-15 minutes

4. Stir in half the nuts, garlic, the juice of your lemons, and crushed red pepper

5. Place your sausages in a separate pan and cook through

6. Meanwhile, once your pasta is ready, drain it – but leave around a cup of the pasta water to the side to add to your sauce

7. Add in the pasta, sausages, and your cheese, adding pasta water if the consistency starts getting dry

8. Serve up with some chopped up basil sprinkled on top and let your guests enjoy it!
